When one has a cheese Danish for dinner, is it correct to have a slice of pumpkin pie for dessert? Please advise.

Only if you have it with whipped, sweetened heavy cream with a kiss of vanilla. Not 'whipping cream'. Use 2% in your coffee. You don't want to overdo it, do you?

Last night for dinner I had 2 wheat-free waffles (Trader Joe) with sweet butter & maple syrup, a bottle of Pacifico & 2 vodka tonics... no dessert.

Actually, I fell asleep without dessert, so I had two slices of pumpkin pie for breakfast this morning. And no guilt, either.

The only restriction on pumpkin pie is that if you serve it to me, I expect whipped cream with it.

Whip the heavy cream, of course. Way better for that than the "whipping cream" they sell.
